Green Zing Veggie Marinade

Ingredients
  

  • 1 cup radish microgreens
  • 1/2 cup parsley microgreens
  • 1 glove garlic, minced
  • 1 whole juice of 1 lemon
  • 1/2 tsp lemon zest
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/2 tsp chilli flakes (adjust to taste)
  • Salt &v black pepper to taste

Equipment

  • blender or food processor

Method
 

  1. In a blender or food processor combine radish and parsley microgreens with the garlic, lemon juice, zest, vinegar and chilli flakes
  2. Pulse until just combined – you want texture, not a puree
  3. Slowly drizzle in the olive oil while blending to emulsify slightly
  4. Toss over your favourite veg (roasted, grilled or even raw) and let it marinade at least 20 minutes before serving for best flavour infusion

Notes

💡 Top tip: This marinade shines with courgettes, peppers, aubergine, red onions or even mushrooms. It also makes a great sandwich filler or wrap base when served cold.

Serving Options:

Warm Option (Post-Roast Drizzle):

  • Best for: Roasted or grilled veg straight out of the oven/pan.
  • How: Roast your veggies as usual, then toss them in the marinade while they’re still warm. The heat helps soak up all that zingy flavour.

Cold Option (Pre-Marinade):
